Sweet Potato Fries, Honey Glazed Chicken, and Almond Veggies



Sweet Potato Fries:

Preheat oven to 400.
Wash and slice sweet potatoes.
I'm not going to lie, slicing sweet potatoes is not a fun job.  So.. if you have a strapping gentle who can do it for you.. let them!!  

Add about 1-2 tablespoons of sugar, turbinado sugar (raw), or Splenda.  
I used Splenda.  It dissolved at a rapid rate because of the pre-rinse of the potato.
Add 1 tbsp (or to taste) of cinnamon.  
Roll sliced sweet potatoes in mixture.
Place in well greased glass baking dish or on a cookie sheet.
Bake for about 20 minutes.


Clean, cut, and marinade chicken.
Cooking preference determines cooking time.  It takes about 10 minutes on the George Foreman.


Honey Glaze:

Melt 1/2-1/4 stick of butter (alternates are fine too!) and about 1/4 cup of honey.  You can made additional if you enjoy a lot of sauce/glaze on your veggies.  Melt on low heat.


Honey Glazed Green Beans on a bed of Spinach:

I found a wonderfully tempting recipe for combining steamed whole green beans on a bed of fresh spinach, with a marinade (our honey glaze), and then adding almonds.  It was delicious!

Fresh Spinach
Whole Green Beans
Almonds (found at Wal-Mart for about $1.49 whole or sliced)
Honey Glaze


My kids loved this dish!  Waalaaaaaa!
